Dive into the world of Tamil cuisine with her plant-based version of the famous Soya Kola Urundai, a high-protein treat that promises all the taste and texture of the original meat-based dish.

Making Vegetarian Kola Urundai

Kola Urundai is a well-loved snack from Madurai, typically made with minced meat. However, Adhya S's vegetarian version uses soya chunks, providing a high-protein alternative that vegetarians and health enthusiasts will appreciate.

Ingredients:

  • Soya Chunks: 80g, high in protein and a perfect meat substitute.
  • Roasted Channa Dal: 2 tbsp, for texture and added protein.
  • Fennel Seeds: 1 tsp, adds a burst of flavour.
  • Green Chillies: 3, for a touch of heat.
  • Red Chillies: 2, enhances the spice level.
  • Ginger: 1 inch piece, for freshness.
  • Garlic Cloves: 4-5, for depth of flavour.
  • Onion: 1 medium, finely chopped.
  • Coriander Leaves: A handful, for freshness.
  • Curry Leaves: 1 sprig, a staple in South Indian cooking.
  • Garam Masala: 1/2 tsp, for that quintessential Indian flavour.
  • Salt: 1 tsp or to taste.

Preparation Method:

  • Prep the Soya: Soak the soya chunks in warm water, wash, and then boil for 5 minutes with some salt. After boiling, drain and coarsely blend the soya chunks.
  • Prepare the Masala: Roast and then grind the channa dal, fennel seeds, green chillies, red chillies, ginger, and garlic into a fine powder.
  • Mix Ingredients: In a large bowl, combine the ground soya, freshly chopped onions, coriander leaves, curry leaves, the prepared masala powder, salt, and garam masala.
  • Form the Balls: Shape the mixture into small, round balls.
  • Cooking: Place the balls on a baking sheet or in an air fryer basket. Bake or air fry at 180°C for 12-15 minutes. Ensure your appliance is preheated for best results.

Adhya S's Soya Kola Urundai is not just a testament to the versatility of vegetarian cooking but also a healthy, sustainable option for everyday snacks. Whether you're a longtime vegetarian or just looking to incorporate more plant-based meals into your diet, this recipe offers both nourishment and indulgence. Enjoy these delightful bites as a snack or as part of a larger meal, and savour a piece of Madurai from your kitchen.
