Food blogger Adhya S recently tried shirataki noodles for the first time and she's now officially a fan. Known for being low in calories and carbs, these noodles are perfect for anyone looking for a light yet satisfying meal. Her latest creation? A Spicy Tofu Kofta Noodle Bowl packed with flavor, crunch, and a creamy peanut-chilli kick. At just 280 kcal per serving, it's a comfort dish you'll want to make again and again.

Ingredients:

  • 1 packet shirataki noodles
  • Tofu kofta
  • 150g tofu ( make sure to squeeze out the excess water )
  • 4 green beans chopped
  • 1/2 carrot chopped
  • 2 tbsp spring onion chopped
  • 4-5 garlic chopped
  • 1 tbsp soy sauce
  • 1 tbsp siracha sauce
  • 1 tbsp corn flour / arrowroot powder
  • Salt as per taste
  • 1/4tsp pepper

Sauce:
 

  • 1 tbsp peanut butter
  • 1 tsp soy sauce
  • 2 cloves of garlic
  • 1 inch ginger
  • Salt as per taste
  • 3-4 soaked dry red chillies
  • 1 tsp honey

How to Make the Shirataki Noodles Tofu Kofta

Mix all the tofu kofta ingredients in a bowl. Make small balls out of the mixture. Heat some oil in a pan and fry the koftas till golden brown and cooked through — crispy on the outside and soft inside. Place all the sauce ingredients in a blender along with a little water and blend until smooth. It's spicy, creamy, and a perfect combination of sweet and savory. Drain the noodles very well and sauté them in a hot pan with a little oil for 2 minutes. Pour in the sauce and let everything simmer so the noodles can absorb that delicious flavor.

Serve and Enjoy
