This shufta holds a special place in the hearts of locals and food enthusiasts. So, without any delay let's take a look at this delicious recipe. 

For Shufta:

Ingredients:

  • Paneer/cottage cheese 250 gms (cubed)
  • Almonds 1/2 cup
  • Raisins 1/2 cup
  • Dry Coconut (Khopra) 1/2 cup
  • Poppy seeds 1 tbsp
  • Ghee for frying
  • Syrup:
  • Sugar 1 cup
  • Water 1.5 cup
  • Saffron a pinch
  • Green cardamom 3-4
  • Cinnamon 1-inch piece
  • Lemon juice 2 tsp (to be added at the end)

Make a slightly thick syrup using all the above ingredients.

Method:

  • Heat the ghee and fry paneer cubes till a light brown. Drain.
  • Fry all the dry fruits lightly except the raisins. Drain.
  • Add the paneer and dry fruit mixture, and raisins into the syrup and let it simmer for 10 minutes.
  • When ready, switch off the flame and add the lemon juice. Mix well.
  • Sprinkle with poppy seeds.
  • You can enjoy the shufta as it is. Or serve it in an edible cup paired with salted white chocolate ganache. Also, you can add any dry fruits of your choice, like dates, cashews, etc.

Edible Cup:

Ingredients:

  • 1/2 cup maida
  • 2 Tbsp corn flour
  • A pinch of salt.

Method:

  • Prepare a thick batter by mixing the above ingredients with water (almost like we do for pancakes/cheelas).
  • Heat some oil in a kadai. Lower an empty steel glass/katori into the hot oil. Wipe the oil clean with a tissue or towel.
  • Dip the katori immediately into the batter. Cover it well!
  • Then again dip it into the hot oil along with the batter. Let it cook on medium flame until it's done and ready to be released from the bottom of the glass (once it's light brown in color, let the glass cool down for a few minutes, then help release the katori by scraping its ends with the back of a spoon).
  • Fry the katori if needed, from inside.
  • The crispy katoris are ready.
