Lately, Matcha is an ingredient that's everywhere. Saloni Kukreja has presented a variety of matcha recipes, so if you've been wanting to explore this green gold packed with antioxidants then her matcha recipes are the perfect inspiration.

1. Cherry Matcha:

Cherry Matcha blends the earthy taste of matcha with the tart sweetness of cherries, creating a refreshing, well-balanced flavor that's fruity, creamy, and energizing all at once.

To make it, you'll need:

  • 7–8 fresh cherries (pitted)
  • 1–1.5 tablespoons of sugar
  • 1.5 teaspoons of matcha powder
  • 1/3 cup hot water
  • 1/2 cup milk of choice
  • Lots of ice

Start by pitting and finely chopping the cherries. Mix in the sugar and continue chopping until it becomes a juicy, textured base. For the matcha layer, sift the powder into a bowl, add hot water, and whisk thoroughly using a bamboo whisk or regular one until frothy. In your serving glass, begin by adding the cherry mixture at the bottom. Follow with a generous layer of ice, pour in your milk of choice (dairy or plant-based), and finally, top it off with the vibrant green matcha.

2. Matcha Misu:

Matcha-misu is the classic tiramisu with a twist, by swapping out coffee for matcha. It combines the rich creaminess of mascarpone with the subtle bitterness of matcha, layered with soft, soaked ladyfingers.

Recipe: Start by preparing the matcha soak: sift 1.5 tbsp of matcha powder into a bowl, add 2 tablespoons of warm water, and whisk until smooth and frothy. Stir in the remaining warm water and castor sugar, then set it aside to cool. For the filling, whip ¾ cup of cream to soft peaks. In a separate bowl, whip ½ cup of mascarpone until smooth, then add lemon juice, vanilla extract, and sifted icing sugar in batches. Fold in the whipped cream gently to create a light, airy mousse. Quickly dip each ladyfinger in the cooled matcha soak and begin layering: biscuits first, then cream, and repeat. Finish with a final layer of cream, cover, and refrigerate for 4 to 6 hours or overnight. Before serving, dust generously with matcha powder for that signature finish.

3. Matcha Chia Pudding:

Matcha Chia Pudding is a creamy treat that energizes with matcha and chia seeds. This pudding is a superfood-packed recipe that supports digestion and boosts focus.
Whisk 2 tsp matcha powder with 2 tbsp warm water (around 80°C) until smooth and frothy. In a separate bowl or jar, combine 2 tbsp chia seeds, ½ cup + 2 tbsp milk of choice, 1 tbsp honey, and ½ tsp vanilla extract. Stir in the matcha mixture and mix thoroughly. Let the chia mixture sit for 15 minutes, then stir again to prevent clumps, and refrigerate overnight.
Once set, spoon the green chia pudding into a serving glass and layer it with strawberry Greek yogurt for a pop of flavor and color. Finish it with a garnish of pomegranate arils and crunchy cacao nibs for texture.

4. Matcha White Chocolate Truffles:

These bite-sized treats are incredibly easy to make and require just a few ingredients. Start by melting 2 cups of white chocolate. Once smooth, stir in ⅓ cup fresh cream and a pinch of salt, mixing until fully combined. Remove from heat, then add 1 tablespoon salted butter and whisk until the mixture becomes glossy and well blended. Next, sift in 1 teaspoon of matcha powder and mix thoroughly. Cover the surface with cling film, ensuring it touches the mixture to prevent a skin from forming, and refrigerate overnight or until firm. Once set, scoop small amounts and shape them into bite-sized balls using your hands. Finish by rolling each truffle in a light dusting of matcha powder for a beautiful green coating and an extra burst of flavor.

5. Coconut Matcha Cloud:

Coconut Matcha Cloud has the tropical creaminess of coconut milk, which is refreshing and dairy-free. Whisk together ¼ cup coconut cream, 1 tbsp coconut milk, 2 tsp honey, and 1.5 tsp matcha powder in a bowl. Use a hand frother or small whisk to mix until smooth and frothy. Chill this mixture in the fridge for about 10–15 minutes to let it thicken slightly. In a serving glass, add 2 tbsp chopped tender coconut and fill it with ice cubes. Pour in 1 cup of chilled coconut water. Then, gently spoon the frothy matcha coconut mixture over the top to create the “cloud” effect. Finish with a dusting of matcha powder for a beautiful, earthy garnish.
