The heart of the Egg Ghee Roast lies in its rich and aromatic base. Begin by soaking 10 Byadgi chillies and a handful of cashews in hot water for 20 minutes. Meanwhile, dry roast a blend of coriander seeds, black peppercorns, cumin (jeera), fennel seeds, poppy seeds, and fenugreek (methi) seeds until they're fragrant. Add the boiled eggs to this tempering, seasoning with salt and cooking until lightly charred.
