The heart of the Egg Ghee Roast lies in its rich and aromatic base. Begin by soaking 10 Byadgi chillies and a handful of cashews in hot water for 20 minutes. Meanwhile, dry roast a blend of coriander seeds, black peppercorns, cumin (jeera), fennel seeds, poppy seeds, and fenugreek (methi) seeds until they're fragrant.
