Crispy Paneer Roti Taco
Elevate everyday ingredients into something extraordinary with this crispy paneer roti taco recipe. Take cubes of paneer and marinate in a blend of 1/2 tbsp green chili paste, 1/2 tbsp ginger-garlic paste, 1 tsp smoked paprika powder, juice of 1/2 a lemon, 1 tbsp corn flour, 1/2 tsp red chili flakes, salt to taste, crushed pepper to taste, and a handful of chopped coriander. Coat in breadcrumbs, fry until golden brown and crispy, and assemble the taco with tandoori mayo, lettuce, fried onions, tomato slices, and a slice of white cheddar cheese.
Rajma Rice Tikki Lettuce Wrap
Make an easy and delicious meal with leftover rajma, rice, and boiled potatoes. Combine 1 cup boiled jeera rice, 1 cup rajma curry, 1 boiled potato, 1 chopped green chili, 1 finely chopped onion, 1/2 tbsp chopped garlic, salt to taste, crushed black pepper to taste, 1/2 tsp onion powder, 1/2 tsp garlic powder, and 1/2 tsp smoked paprika powder. Shape into small tikkis, shallow-fry in ghee until golden brown and crispy, and serve in lettuce leaves with a coriander dahi chutney made with 1 cup thick dahi, a handful of coriander leaves, mint leaves, 2 green chilies, 2-3 garlic cloves, 1/2 inch ginger, salt to taste, 1/2 tsp bhuna jeera powder, and lemon juice to taste.
Carrot Ribbon Noodles
A refreshing and healthy alternative to traditional noodles. Combine 5 carrots thinly sliced into ribbons, 1 tbsp chopped garlic, and 1 chopped jalapeño. Whisk together a dressing made with 1 tbsp rice vinegar, 2 tbsp light soy sauce, 2 tbsp toasted sesame oil, and juice of 1 lemon, and pour it over the carrots. Top with 1 tbsp toasted and ground white sesame seeds.
Crispy Roti Cones
A crunchy and creamy snack perfect for impressing guests. Shape roti into cones, brush with milk, and sprinkle with a mix of kalonji and sesame seeds. Air-fry at 170°C for 7-8 minutes until crispy. Fill with a mixture of boiled corn, chopped paneer tikka, chopped jalapeños, mozzarella cheese, and creamy mayo, and air-fry at 200°C for 2-3 minutes until the cheese melts and bubbles.
Lauki Fries
A healthier take on classic fries packed with flavor and crunch. Peel and cut lauki into fries, season with salt to taste, 1 1/2 tbsp pizza seasoning, 1/2 tsp each of onion powder, garlic powder, and red chili flakes, 3 tbsp each of corn flour and rice flour. Drizzle with 1 tbsp oil, roll in sesame seeds, and double-fry until golden brown and crispy. Toss with peri peri powder and serve with sriracha mayo.
