Arbi Preparation: Ingredients

  • 250g Arbi, washed
  • Water to boil
  • Salt to taste

Instructions:

  • Boil arbi in salted water until parboiled.
  • Peel and cut the arbi into desired pieces.
  • Arbi Coating and Cooking

Ingredients:

  • 1/2 tsp Ajwain
  • 1 tsp Red chili powder
  • Salt to taste
  • 1/2 tsp Onion powder
  • 1/2 tsp Garlic powder
  • 1/2 tsp Bhuna jeera powder
  • 2 tsp Sumac or Amchur
  • 2 tbsp Rice flour
  • 1 tbsp Oil

Instructions:

  • Add the cut arbi to a large bowl.
  • Mix with ajwain, red chili powder, salt, onion powder, garlic powder, bhuna jeera powder, sumac or amchur, rice flour, and oil.
  • Air fry at 170 degrees C or deep fry until crispy.

Muhammara Sauce Preparation
Ingredients:

  • 3 Red bell peppers
  • 1/2 tbsp Garlic
  • A few walnuts
  • 3 tbsp Panko breadcrumbs
  • A few coriander stems
  • 1 tsp Red chili paste
  • 1 tbsp Olive oil
  • 1 tbsp Pomegranate molasses (or balsamic vinegar or lemon juice)
  • Salt to taste

Instructions:

  • Char the red bell peppers, then cover and let cool.
  • Peel and deseed the peppers.
  • Blend with garlic, walnuts, panko breadcrumbs, coriander stems, red chili paste, olive oil, pomegranate molasses, and salt into a smooth paste.

Yogurt Sauce Preparation

Ingredients:

  • 1/2 cup Yogurt
  • 1/2 tsp Bhuna jeera powder
  • Salt to taste
  • 1 tbsp Mint powder

Instructions:

  • Whisk yogurt with bhuna jeera powder, salt, and mint powder.
