Shared by food blogger Himanshu Nandwani, this dish combines the time-tested comfort of eggs with the bold, spicy flavors typical of Indo-Chinese cuisine. It is easy to prepare, full in taste, and ideal for when you are in the mood for something different without much effort.

Ingredients:

For Omelette:

  • 2 eggs
  • ¼ tsp haldi (turmeric)
  • Salt and pepper to taste
  • ½ tsp Red chilli powder (Kashmiri lal mirch)
  • ½ tsp jeera powder (cumin powder)
  • 1 tsp butter
  • For Omelette Chilli:
  • 1 tbsp oil
  • 1 tbsp grated ginger
  • 1 tsp minced garlic
  • ½ onion, sliced into petals
  • ½ capsicum, sliced
  • ¼ cup paneer, small cubes
  • Salt and pepper to taste
  • 1 tbsp soya sauce
  • 1 teaspoon red chili sauce
  • 1 tsp green chile sauce
  • 1 tsp tomato ketchup
  • 1 tsp vinegar
  • Water as required
  • Sliced coriander as garnish
  • Chopped fresh green onions, for garnish

Instructions:

  • Crack two eggs in a bowl. Add haldi, Kashmiri lal mirch, jeera powder, salt, and pepper. Blend the mixture properly until it becomes evenly blended.
  • Melt butter in a pan. Add the egg mixture and scramble it lightly. Cook it until it is soft, then keep it aside.
  • Heat 1 tablespoon of oil in another pan. Put in the chopped garlic and ginger. Sauté for a few seconds until fragrant.
  • Add onion petals, sliced capsicum, and paneer cubes. Sauté for about a minute on medium-high heat.
  • Add soy sauce, red chili sauce, green chili sauce, tomato ketchup, and vinegar. Blend thoroughly and heat for a short period of time. Now add the scrambled eggs to the pan. Mix all together and cook for another minute so that the flavors have a good mix.
  • Switch off the heat. Serve hot, topped with chopped green onions and fresh coriander.
