Chef Reetu Uday Kugaji, Culinary Expert, Chef Consultant, and Creator, shares food trends during this time of the year. She also shares a mouth-watering delightful chaat recipe.
Eating mindful is the new “It” thing. Foodies are aware of the healthy and immunity-boosting dishes and desserts. People prefer not only healthy but traditional recipes too. For example - Millet-based Indian sweets, Bajre ki kheer, and seasonal fruit incorporated in Indian sweets that are sugar-free. Custard apple rabri / phirni / basundi / shrikhand / kheer / kulfis are all a foodie's delight.
Chaat platters are another hot favourite in the festive season. Having a variety of healthy chaats with lip-smacking chutneys and dips is a delicious add-on.
It's Recipe Time!
SHAKARKANDI AUR MOONGPHALI KI CHAAT
- (Sweet Potato & Peanut Chaat)
- Refrigeration Time: 15 mins or more, as desired
- Preparation Time: 10 mins
- Cooking Time: 8 to 10 mins
- Serves: 4

Ingredients & Quantity:
- Sweet Potatoes (Shakarkandi , Ratalu), boiled peeled & cubed- 400 gm
- Raw peanuts with skin, washed & soaked in water for 30 mins & pressure cook in salted water until 2 whistles-100 gm
- Fresh Pomegranate pearls- ½ cup
- Fresh Coriander leaves, finely chopped-1 tbsp
- Green chillies, chopped-4
- Red chilli powder- ½ tsp
- Chaat masala- ½ tsp (Opt)
- Cumin powder- 1/2 tsp
- Rock Salt - to taste
- Fresh lemon juice- 1/2 tbsp
- Sweetened whisked curds-1 tbsp
- Tamarind Jaggery & Date Chutney-1/2 tbsp
- Green Chutney -1/2 tbsp

For the Garnish:
- Fresh Coriander leaves (Cilantro), finely chopped-1 /2 tbsp
- Fresh pomegranate pearls -1/2 tbsp
- Chiwda-1 tbsp (Opt)
Method:
- In a large mixing glass bowl add sweet potatoes, peanuts, pomegranate pearls, green chillies & coriander leaves
- Add the red chilli cumin pwd & rock salt
- Sprinkle lemon juice
- Mix well
- Add sweetened curd , Green & Tamarind chutney
- Mix well
- Refrigerate for 15 mins & Serve chilled garnished with coriander leaves pomegranate pearls & chiwda (Opt)

- You may drizzle beetroot flavoured whisked curds
