Known for her skill in the kitchen and love of experimenting with flavours, Kabita reveals her tried-and-true recipe for these savoury and aromatic parathas that will satisfy even the pickiest eaters. 

A sizable mixing bowl should be used to incorporate the following ingredients: Bajra flour, Gramme flour, chopped onion, ginger-chilli-garlic paste, coriander leaves, sesame seeds, black pepper, cumin, coriander, and red chilli powders. To make sure all the spices are spread evenly, thoroughly mix. Water should be added gradually to the mixture and worked into a soft dough. Roll the dough into little balls after dividing it into smaller sections. 

Take a piece of flat butter paper and place it on a rolling board (chakla) to produce the parathas. Place a small ball onto one piece of butter paper, then cover it with another piece of butter paper. Make sure the dough is neither too thick nor too thin as you gently roll it into a round.

Spread some oil on a tawa (griddle) and lay the rolled paratha on it. Cook on one side until brown spots start to emerge, then turn it over and continue cooking the other side. Apply ghee, or clarified butter, to provide more taste and crunch. After the paratha is cooked through on both sides, take it off the tawa and serve it hot with your preferred pickles, chutneys, or yogurt accompaniments.
