Dairy-Free Thandai Recipe by Chef Saransh Goila

Ingredients:

200g Almonds, soaked in warm water
30g Pistachios
20g Poppy seeds (Khus Khus)
1.5 tsp Fennel seeds
A few Black peppercorns
1.5 liters Water
A few Saffron strands soaked in 2 tbsp water
2/3 cup Sugar syrup or as desired
2.5 tsp Cardamom & rose petal powder
A few Ice cubes

Instructions:

Prepare Almond Milk: Blend soaked almonds, pistachios, poppy seeds, fennel seeds, and black peppercorns with 1.5 litres of water in a blender until smooth. Double-strain the mixture through a muslin cloth and a sieve to extract pure almond milk.
Make Laddoos: Don't discard the almond mixture left after straining. Use it to make delicious laddoos!
Mix Thandai: In a large bowl, mix the strained almond milk with saffron water, sugar syrup, cardamom & rose petal powder, and ice cubes. Stir well to combine all the ingredients.
Serve: Pour the Thandai into glasses and enjoy your refreshing THANDAI!
