Mango sticky rice is Thailand's most famous dessert, and no wonder Sneha Singhi Upadhaya, a food blogger who recently came back to India from Thailand, is missing this dessert after she returned from Thailand. With the mango season coming close, it's time to attempt to prepare this easy and rich dessert at home.

Ingredients:

  • 1/4 cup rice (regular rice or sticky rice)
  • 1 cup thick coconut milk
  • Pinch of salt
  • 3-4 tablespoons sugar
  • 1 tbsp cornflour
  • 1 ripe mango
  • 1 tsp fried moong dal

Instructions:

Prepare the rice: Begin by washing and soaking your rice. Next, wrap your rice in muslin fabric and steam for 20 minutes, or until fully cooked.

Prepare Coconut Syrup: In a separate pan, combine the coconut milk, salt, sugar, and cornflour. Heat the mixture until creamy.

Combine Rice and Syrup: After the coconut syrup is prepared, combine half of it with the rice. Cover the rice and allow it to sit for 30 minutes to an hour to absorb the flavors.

Assembly: Peel and cut your mango into large pieces. Reserve the rice to set its shape, then demould gently onto your serving dish. Place the pieces of mango on the side of the rice. Top with fried moong dal for texture.

Serve and Enjoy: Pour the remaining coconut syrup over the rice, and your mango sticky rice is ready to be served! Enjoy and indulge in this creamy, sweet dessert.

Prepared from a mere few ingredients, this pudding is an excellent way of enjoying Thai flavor within the comfort of one's home.
