Paneer Thecha has become a hit among spicy food lovers. Now, MasterChef Pankaj Bhadouria, a master chef and food influencer, has put her own twist on this popular recipe. She converts it into a complete main dish by serving the spicy paneer with herbed rice. The outcome? A full plate of strong, hot, and fresh flavors.
Spicy Paneer with a Maharashtrian Kick
The hero of the dish is grilled paneer juicy with thecha, a spicy Maharashtrian chutney consisting of green chilies and garlic. For this, take 200g of paneer cubes, 6 chilies, 10–12 garlic cloves, 2 tablespoons of green thecha, ¼ cup of peanuts, 1 tablespoon of olive oil, salt, 1 lemon, fresh coriander, and lime wedges. Marinate the paneer first with lemon and salt. Grill it on a pan or tawa till crispy and golden at the edges. Spoon some thecha over each cube, garnish with coriander, and squeeze a dash of lime.
Fresh and Fragrant Herb Rice
The herbed rice goes well with the spicy paneer. Ingredients are cooked rice, sweet corn, chopped parsley, chili flakes, oregano, salt, pepper powder, and butter-toasted cherry tomatoes. Begin by soaking the rice for 20 minutes and draining it. In a pan, melt butter or oil, sauté garlic and green chilies, add the rice and sauté for a short while. Add water and salt, cook till done, and then add coriander, mint, and spring onion greens.
