Love pani puri but looking for something more filling and wholesome? Food influencer Chef Meghna has shared a creative take on the beloved street food that combines the flavours of pani puri with the heartiness of a chaat bowl. Packed with kala chana, fresh vegetables and a flavourful green chutney, this recipe delivers taste, texture and nutrition in every bite.
A Refreshing Upgrade To Regular Pani Puri:
Unlike traditional pani puri, which is often enjoyed as a quick snack, this version transforms the dish into a more satisfying meal. With around 6 grams of protein per serving, the recipe includes kala chana, potatoes, tomatoes, onions and pomegranate seeds, creating a vibrant mix of flavours and nutrients.
The highlight of the dish is its refreshing green chutney, made using fresh coriander, mint leaves, green chillies, ginger, garlic, tamarind pulp and boiled potato. The blend creates a tangy, spicy and slightly sweet base that brings the entire dish together.
The Secret Lies In The Chutney:
According to Chef Meghna, a well-balanced chutney is what elevates the recipe. The boiled potato helps create a creamy texture, while tamarind, lime juice and jaggery add the perfect balance of sweet and tangy notes.
For those following a Jain diet, the potato can easily be replaced with peanuts, gathiya or breadcrumbs to achieve a similar consistency without compromising on flavour.
A Chaat Full Of Flavour And Texture:
The chaat mixture starts with mashed potatoes seasoned with roasted coriander seeds, chaat masala, cumin powder, chilli flakes and black salt. Boiled kala chana is then added along with chopped onions, tomatoes and fresh pomegranate seeds.
Once the prepared chutney is mixed with chilled water, it is poured into the chaat mixture, creating a flavour-packed base. Fresh coriander leaves and masala boondi are added at the end for an extra burst of crunch and freshness.
The Perfect Snack For Gatherings:
Whether you're hosting a family get-together, planning a festive menu or simply craving street food at home, this pani poori chaat offers the best of both worlds. It retains the iconic flavours of golgappa while adding a nutritious twist that makes it more substantial.
Served chilled with crispy puris, Chef Meghna's recipe is an easy crowd-pleaser that is sure to become a favourite among both children and adults.
