Instead of serving the fruit in its traditional form, he decided to reimagine it as a refreshing chuski and then elevate it into a chaat bursting with contrasting textures and flavours. The result combines sweet, sour, spicy and cooling elements in a single bowl, offering a playful take on a beloved Indian summer treat.

The Jamun Chuski Base:

The foundation of the recipe begins with deseeded jamuns blended with sugar syrup, salt, black salt, chaat masala, black pepper and lemon juice. The mixture is then frozen for several hours until it develops an icy texture. Once set, the frozen mixture is scraped into a granita-like consistency, creating the signature chuski element that forms the heart of the dish.

Layers Of Flavour:

What makes this creation stand out is the addition of fresh ingredients typically associated with Indian chaat. Chopped litchi, raw mango, jamun pieces and deseeded jalapenos bring sweetness, tanginess and a gentle kick of heat. The mixture is seasoned with salt, red chilli powder and roasted cumin powder before being drizzled with tamarind chutney.
