  • Cooking the Fenugreek Seeds: In a separate pot, cook the soaked fenugreek seeds in about 1/2 cup of water until they come to a boil. Turn off the heat once boiled.
  • Mixing the Spices: In a mixing bowl, combine the halved gunda with coriander powder, red chilli powder, and turmeric. Toss well to ensure the gunda is evenly coated with the spices.
  • Cooking the Sabzi: Heat oil in a pan and add mustard seeds, cumin seeds, fennel seeds, and onion seeds. Once they start to splutter, add the grated raw mango and fry until well combined. Then add the spiced gunda to the pan along with the boiled fenugreek seeds and water.
  • Simmering the Dish: Cover and simmer on medium heat for about 10 minutes, allowing the flavors to meld together beautifully. Turn off the heat once everything is well mixed.
