Ingredients for Nimbu Chicken

For the Marinade:

  • 750g Chicken with bone

  • 1/4 cup Dahi (yogurt)

  • 1/4 cup Cashews, soaked in hot water

  • 4 Cloves of Garlic

  • Salt & Pepper to taste

  • Juice of 1 Lemon

  • 1 tbsp Ginger Garlic Paste

  • 1/4 Cup Water

  • For the Gravy:

  • 1/2 tbsp Oil

  • 1/2 tsp Butter

  • 3–4 Pods of Cardamom

  • 1/2 inch Ginger, sliced

  • 3 Spicy Green Chillies, sliced

  • 1/4 tsp Sugar

  • 1 tsp Kasuri Methi (dried fenugreek leaves)

  • 2 Lemons, juiced

  • 3 tbsps Cream

  • 1 tsp Coriander Powder

  • 1 tsp Cumin Powder

  • 1/2 tsp Garam Masala

  • Salt & Pepper to taste

  • 1/2-3/4 Cup Water

The Process to Make Nimbu Chicken

Prepare the Marinade: Blend dahi, soaked cashews, garlic, ginger-garlic paste, salt, pepper, lemon juice, and water to form a smooth paste. Marinate the chicken in this cashew paste for at least 30 minutes, or overnight for best results.

Cooking the Gravy: In a pan, heat oil and butter. Add ginger, cardamom pods, and chillies, and fry them lightly. Add the marinated chicken along with all the spices - salt, pepper, cumin powder, coriander powder, garam masala, and sugar. Add water (1/2 - 3/4th cup) and let it cook.

Simmering: Cover the pan and let the chicken cook for 10-15 minutes until the gravy thickens and the chicken is cooked thoroughly.

Finishing Touches: Add more lemon juice, adjust the salt, and add cream and kasuri methi to the gravy. Stir well to combine all the flavours.

Garnishing: Garnish the Nimbu Chicken with a dollop of cream and freshly chopped coriander.
