Ingredients:

  • 250 grams barbatti (snake beans)
  • 1 cup water
  • 1 tablespoon kala jeera (kalonji or nigella seeds)
  • 1 onion, sliced
  • 8-10 garlic cloves
  • 2-3 dried red chillies
  • 2 tablespoons mustard oil
  • Salt to taste

Instructions:

  • Prepare the Barbatti: Cut the barbatti into 1-inch pieces. Place them in a pan with water and steam with a lid on until the beans are cooked through. You can mash them with a spoon or blitz them into a coarse paste. Set aside.
  • Cook the Aromatics: Heat mustard oil in a pan. Add in the kalonji, red chilli, garlic, and onion. Cook until the onions soften and the aromatics release their fragrance.
  • Combine and Serve: Add salt to the cooked onions and remove from heat. In a mixing plate, combine the barbatti paste and the cooked onions. Shape the mixture into balls or patties and serve hot alongside dal chawal (lentils and rice) for a comforting meal.
