Ingredients:

  • 1 Cup Hung Curd
  • 1/4 Cup Grated Paneer
  • Sendha Namak (Rock Salt) to taste
  • 1 Tsp Grated Ginger
  • 1 Finely Chopped Green Chilli
  • A Handful of Finely Chopped Coriander
  • 1/4 Tsp Black Pepper
  • 2 Tbsp Sabudana (Tapioca) Powder/Flour
  • 1/4 Cup Makhana (Fox Nut) Flour
  • Extra Sabudana and Makhana Flour for Coating
  • 2 Tbsp Chopped Walnuts
  • 2-3 Tbsp Ghee (for shallow frying)

Recipe:

  • Prepare Flours: Pulse sabudana and makhana in a grinding jar and sift through a fine sieve to make the flour.
  • Mix Ingredients: Mash the paneer until smooth and creamy. Add it to hung curd, makhana, and sabudana flours, along with ginger, green chillies, coriander, salt, black pepper, and walnuts. Ensure the hung curd is water-free.
  • Shape Tikkis: Pinch out lemon-sized balls from the mixture and shape them into tikkis.
  • Coat and Fry: Coat the tikkis in sabudana and makhana flour before frying. Air fry at 180 degrees for 15 minutes or shallow fry in ghee on medium heat until golden on both sides.
  • Serve: Transfer the tikkis to a plate and serve with your choice of chutney.
