Guntas Sethi's Simple One-Pot Rasam Rice Recipe Will Upgrade Your Comfort Food Game

There are some dishes that instantly bring comfort, and rasam rice is one of them. Tangy tamarind, warming spices and wholesome lentils come together to create a meal that's both nourishing and satisfying. Food influencer Guntas Sethi recently shared her One-Pot Rasam Rice recipe, proving that delicious comfort food doesn't have to be complicated.
Ingredients:
For The Rasam Rice:
- 1/2 cup tamarind (imli)
- Hot water for soaking tamarind
- 1/2 cup toor dal
- 4 tbsp moong dal
- 1 cup rice
- 1 tbsp ghee
- 2 tsp mustard seeds
- 1 tsp cumin seeds
- 1/2 tsp hing
- 2 strands curry leaves
- 4-5 dried red chillies
- 3 tomatoes, chopped
- 2 tsp red chilli powder
- 1.5 tsp turmeric powder
- 3 tsp rasam powder
- Salt to taste
- 1/2 cup French beans, chopped
- 1/2 cup carrots, chopped
- 2 tsp coriander leaves, chopped
- 3-4 cups water
- 1/4 cup tamarind water
For The Tadka:
- 2 tsp ghee
- 1 tsp mustard seeds
- 1 strand curry leaves
- 1/2 tsp red chilli powder
- 1 tsp rasam powder
Method:
- Soak tamarind in hot water and extract the tamarind water.
- Wash the rice, toor dal and moong dal thoroughly.
- Heat ghee in a pressure cooker or deep pot.
- Add mustard seeds, cumin seeds, hing, curry leaves and dried red chillies.
- Once aromatic, add chopped tomatoes and cook until soft.
- Add red chilli powder, turmeric powder, rasam powder and salt.
- Mix in the French beans and carrots.
- Add the rice, dals, water and tamarind water.
- Cook until the rice and lentils become soft and creamy.
- Prepare the tadka separately by heating ghee and adding mustard seeds, curry leaves, red chilli powder and rasam powder.
- Pour the hot tadka over the rasam rice.
- Garnish with chopped coriander and serve hot.
