Ingredients:

  • 15 Kashmiri chillies (soaked)
  • 100g garlic
  • 50g desi ghee

  • 1 tsp jeera (cumin seeds)

  • 1/4 tsp sugar
  • Juice of 1 lemon

  • Prepare Grinded Paste: In a grinder, combine the soaked Kashmiri chillies and 100g of garlic. Grind them into a smooth paste.
  • Prepare Seasoning: Heat 50g of desi ghee in a pan. Add 1 tsp of hing (asafoetida) and 1 tsp of jeera (cumin seeds) to the hot ghee. Allow them to splutter and release their flavours.
  • Add Grinded Paste: Carefully add the ground paste of Kashmiri chillies and garlic to the pan. Mix well with the seasoned ghee.
  • Season with Salt and Sugar: Season the chutney with salt to taste and add 1/4 tsp of sugar to balance the flavours.
  • Finish with Lemon Juice: Squeeze the juice of 1 lemon into the chutney, giving it a tangy twist. Stir well to incorporate the flavours.
  • Cook Properly: Cook the chutney thoroughly, allowing the flavours to meld together. Stir occasionally to prevent sticking.
  • Enjoy: Once the chutney reaches a desirable consistency and the flavours have developed, remove it from heat. Let it cool slightly before serving.
