Combining fresh methi and palak leaves with a mix of bajra atta, besan, and wheat flour, this nutritious snack is made with just a touch of oil. A staple in Gujarati cuisine, Muthiya transcends seasons and offers a delightful treat for the whole family.

Ingredients :

  • 1 cup finely chopped Spinach (Palak)
  • 1 cup finely chopped Fenugreek (Methi)
  • Salt as per taste
  • 1 tsp Coriander (Dhaniya) Powder
  • 1/2 tsp Turmeric Powder (Haldi)
  • Pinch of Asafoetida Powder (Hing)
  • 1 tbs + more White Sesame Seeds (Safed Til)
  • 1 tsp Sugar (optional)
  • 1/2 tsp Ajwain
  • 1/2 spoon Ginger, Garlic & Green Chilli paste
  • 1/2 Lemon Juice
  • 1 tbs + 1 tbs Oil
  • 1/2 cup Wheat Flour (Gehu ka atta)
  • 1/2 cup Pearl Millet Flour (Bajra Atta)
  • 1/4 cup Gram Flour (Besan)
  • 2 tsp Mustard Seeds (Rai)
  • Few Curry Leaves
  • Finely chopped Coriander Leaves

Creating a Perfect Muthia Dish

  • Combine and Shape: Take a mixing bowl, 
  • Add 1 cup finely chopped Palak
  • Add 1 cup finely chopped Methi
  • Add Salt as per taste
  • Add 1 tsp Dhaniya Powder
  • Add 1/2 tsp Haldi
  • Add a pinch of Asafoetida Powder
  • Add 1 tbs Safed Til
  • Add 1 tsp Sugar (optional)
  • Add 1/2 tsp Ajwain
  • Add 1/2 spoon Ginger, Garlic & Green Chilli paste
  • Add 1/2 Lemon Juice
  • Add 1 tbs Oil and mix it well
  • Add 1/2 cup Gehu ka atta, 1/2 cup Bajre ka Atta
  • 1/4 cup Besan

Start by combining all the ingredients together to form a cohesive dough. Once your dough is ready, shape it into cylindrical rolls.

Steaming the Rolls: Place these rolls on a steamer plate, ensuring they are evenly spaced. Preheat your steamer and then gently set the plate inside. Cover the steamer with a lid and allow the rolls to cook thoroughly.

Cool and Slice: Once the rolls have cooked to perfection, remove them from the steamer and allow them to cool down. Once they've cooled, slice them into small, bite-sized pieces.

Creating the Tadka: To enhance the flavor, it's time to prepare the tadka. Heat a tablespoon of oil in a pan and add two teaspoons of mustard seeds (Rai) and one teaspoon of Safed Til. Let them sizzle and release their aromatic flavors. Throw in a few curry leaves to elevate the aroma.

Toss and Garnish: Now, add the sliced muthia pieces to the pan and toss them well in the tadka mixture. Ensure each piece is coated with the delicious flavors. To finish, garnish your muthia dish with fresh coriander for that extra burst of freshness and color.

With these steps, you'll have a delectable and perfectly seasoned muthia dish ready to enjoy!
