  • Method: Soak the above ingredients for 2 hours or overnight. Blend soaked ingredients with cinnamon sticks, cloves, black peppercorns, jeera, and salt into a smooth paste.

Mushroom Cooking:

  • Ingredients: 200g mixed mushrooms (button and oyster), oil, mustard seeds, curry leaves, more garlic, green chilli, and onion.
  • Method: Heat oil, add mustard seeds, curry leaves, chopped garlic, green chilli, and chopped onion. Sauté until onions are translucent. Add the prepared Recheado paste and cook until the oil separates. Add sliced mushrooms and sugar, and cook for about 5 minutes.

Methi Aloo:

  • Ingredients: Mustard oil, jeera, hing, potatoes, green chilli, and methi (fenugreek leaves).
  • Method: In mustard oil, sauté jeera, hing, diced potatoes, chopped green chilli, and methi. Season with salt and cook on a medium flame for 10-15 minutes.

Assembling the Bowl:

  • Layers: Start with sliced onions, add Methi Aloo, a layer of boiled rice, then the cooked mushroom mixture.
  • Final Touches: Fry an egg seasoned with red chilli powder and salt. Place the fried egg on top of the assembled layers.

Serving:

  • Presentation: Carefully press the contents in the bowl to firm them up. Turn the bowl upside down onto a plate to maintain the layered structure.
