Who says healthy breakfasts have to be boring? If you're tired of plain oats and repetitive protein shakes, this Blueberry Custard Toastie might be the perfect way to start your day. Combining creamy custard flavours, juicy blueberries, and a protein-rich filling, this breakfast recipe delivers taste and nutrition in every bite.
Fitness influencer Vanshika Khurana recently shared this easy recipe that's ideal for busy mornings when you want something satisfying without spending too much time in the kitchen. With approximately 35 grams of protein and around 400 calories, the toastie can help support fitness goals while satisfying sweet cravings.
Why This Recipe Stands Out:
Unlike many sweet breakfast options that are loaded with sugar, this toastie uses high-protein ingredients to create a balanced meal. The combination of high-protein bread, yogurt, and protein powder helps increase protein intake, while blueberries add natural sweetness and antioxidants.
The addition of lemon zest, coconut, and cinnamon creates a dessert-like flavour profile without compromising on nutritional value.
Ingredients You'll Need:
To make two toasties, you'll need:
- 2 slices high-protein bread
- 150g high-protein yogurt
- 1 tbsp cookable protein powder
- 1 tbsp custard powder
- Zest of 1 lemon
- 1 tbsp grated coconut
- A pinch of cinnamon
- Zero-calorie sweetener to taste
- 6-7 frozen blueberries per slice
- Frozen grated coconut
Optional toppings include peanut butter and additional zero-calorie sweetener for extra flavour.
How To Prepare It:
Start by combining the high-protein yogurt, protein powder, custard powder, lemon zest, grated coconut, cinnamon, and sweetener in a bowl. Mix everything until smooth and creamy.
Using the back of a spoon, gently press the centre of each bread slice to create a shallow cavity. Spoon the prepared mixture into the centre of each slice and top with frozen blueberries.
Air fry the toasties at 180°C for 7-8 minutes until the bread turns golden and the filling is set. Once ready, slice and serve warm.
A Fitness-Friendly Breakfast:
According to Vanshika Khurana, recipes like these can make it easier to meet daily protein requirements without relying on repetitive meals. The toastie combines convenience, flavour, and nutrition, making it suitable for anyone looking for a wholesome breakfast or post-workout snack.
For those with a sweet tooth, a drizzle of peanut butter can add extra richness while keeping the meal filling and satisfying. Whether you're focused on fitness, weight management, or simply trying to eat better, this Blueberry Custard Toastie offers a delicious way to fuel your day.
