Adhya S's Must-Try Mushroom Walnut Biryani

This mushroom walnut biryani is a must-try if you like mushrooms! It is a delicious and simple take on traditional biryani that is perfect for a warm meal. The bitter walnuts and earthy taste of the mushrooms mixed well to form a filling and hearty dish. Walnuts also add protein and healthy fat, which add flavor and nutrition to the dish.
Ingredients
Mushroom & Walnut Masala:
- 1 box mushrooms
- 20g walnuts (soaked for 2 hours)
- 1.5 tsp chili powder
- 1.5 tsp coriander powder
- 1 tsp cumin powder
- 1 tsp garam masala
- 1 tsp kasuri methi
- 1 onion (fried until crispy)
- Salt to taste
- 1 handful mint leaves
- 1 handful coriander leaves
- 2-3 tsp oil
Mix all the ingredients and let them marinate for 30 minutes.
Rice Preparation:
- 1 cup basmati rice
- 1.5 liters water
- 1 bay leaf
- 1 cinnamon stick
- 2-3 cardamoms
- 2 cloves
- 1 tbsp salt
Wash and soak rice. Add spices to the boiling water, then add rice and cook until 50%.
Cooking method
- Heat the oil in a strong bottom pan and add marinated mushroom mixture. Fry on a low flame until the oil is separated.
- Spread half boiled rice over the masala.
- Add 1/4 Cup water, saffron water, fresh mint leaves and a pinch of garam masala.
- Cover and cook on low flame for 5-6 minutes.
- Turn off the heat and let it rest for 5-10 minutes before serving.
