This mushroom walnut biryani is a must-try if you like mushrooms! It is a delicious and simple take on traditional biryani that is perfect for a warm meal. The bitter walnuts and earthy taste of the mushrooms mixed well to form a filling and hearty dish. Walnuts also add protein and healthy fat, which add flavor and nutrition to the dish.

Ingredients

Mushroom & Walnut Masala:

  • 1 box mushrooms
  • 20g walnuts (soaked for 2 hours)
  • 1.5 tsp chili powder
  • 1.5 tsp coriander powder
  • 1 tsp cumin powder
  • 1 tsp garam masala
  • 1 tsp kasuri methi
  • 1 onion (fried until crispy)
  • Salt to taste
  • 1 handful mint leaves
  • 1 handful coriander leaves
  • 2-3 tsp oil

Mix all the ingredients and let them marinate for 30 minutes.

Rice Preparation:

  • 1 cup basmati rice
  • 1.5 liters water
  • 1 bay leaf
  • 1 cinnamon stick
  • 2-3 cardamoms
  • 2 cloves
  • 1 tbsp salt

Wash and soak rice. Add spices to the boiling water, then add rice and cook until 50%.

Cooking method

  • Heat the oil in a strong bottom pan and add marinated mushroom mixture. Fry on a low flame until the oil is separated.
  • Spread half boiled rice over the masala.
  • Add 1/4 Cup water, saffron water, fresh mint leaves and a pinch of garam masala.
  • Cover and cook on low flame for 5-6 minutes.
  • Turn off the heat and let it rest for 5-10 minutes before serving.
