Aruna Vijay, known for her delicious delicacies has recently shared an interesting recipe of Ramassery Idly on her social media. She mentioned that these are also referred to as king of idly because of their fluffy texture.
'Kind of Idly':
She has also highlighted the quality of idly in the caption. She wrote, “This is called the king of idly for its incredibly soft and fluffy texture. It is said that the unique recipe of the idli was brought to the small hamlet of Ramassery in Palakkad by a family that migrated from Kanjeepuram in Tamil Nadu, in search of jobs.”
She added, “What separates it from other varieties is that it is flatter and spongier than regular idlis. It also uses a scented variety of rice called Iruppu Chamba (more common idli varieties are usually made from rice called ponni). When the Ramassery idlis are ready to be served, they are turned directly onto a plachi leaf instead of a plate or a bowl.”
Recipe -
- 3 cups idly rice
- 1 cup urad dal
- 1 tsp methi
- Soak the methi with urad dal and rice separately for 3 hrs
- Grind both separately and mix, let this ferment overnight
