Why use peanut butter when you can freshly prepare nut butter at home? Diwali has recently gone and what remains behind is a box full of nuts, especially cashews and almonds. Chef Saransh Goila has come up with an innovative preparation in which you can use leftover cashew nuts and almonds to make desi cashew nut butter. Desi cashew nut butter can be used on dosa, parathas and regular toast too. To make your curries flavourful you can add desi nut butter effortlessly.

Desi Cashew Nut Butter Recipe

  • Add 1 tbsp ghee to the pan.
  • Then, add 1 tsp mustard seeds, a pinch of hing, 1 tbsp urad dal, 3 dried red chillies and a handful of curry leaves.
  • Mix everything well.
  • Then add 150g cashews and sauté them until charred.
  • Then add salt to taste and toss well.
  • Add this to a blender & blend into a smooth paste
  • Mix the paste/nut butter with 1tbsp ghee and your Desi nut butter is ready
  • Use it over dosa or parathas and entice your tastebuds.
