Food influencer Meghna has shared a healthier take on the classic dish with her high-protein Dubki Kadhi, a traditional recipe from Chhattisgarh that swaps fried pakodas for soft urad dal dumplings cooked directly in the kadhi.
The result is a wholesome meal that is light, nourishing and packed with protein.
What Makes Dubki Kadhi Different:
Unlike traditional kadhi pakoda, where pakodas are deep-fried before being added to the curry, Dubki Kadhi follows a healthier approach. The urad dal batter is dropped directly into the boiling kadhi, allowing the dumplings to cook naturally.
This method helps retain the rich taste and texture of the dish while cutting down on excess oil. It also makes the recipe a great option for those looking to add more protein-rich vegetarian meals to their diet.
The Protein-Packed Base:
To prepare the dubki vadas, Meghna uses overnight-soaked urad dal blended with ginger, garlic and green chillies to form a thick batter. After adding salt, the mixture is beaten for several minutes to introduce air, helping the dumplings turn soft and fluffy when cooked.
A small portion of this batter is then mixed with curd to create the base of the kadhi, giving it a rich texture and added protein.
How The Kadhi Comes Together:
The kadhi begins with a simple tempering of mustard seeds, cumin seeds, asafoetida, curry leaves and onions. Turmeric, coriander powder and red chilli powder are added to create a flavourful masala.
The curd mixture is then poured in, followed by water, and cooked until it reaches a gentle boil. The prepared urad dal batter is dropped into the simmering kadhi one spoon at a time. As the dumplings cook, they float to the surface, indicating they are perfectly done.
Best Served With Rice:
The final touch comes from a smoky tadka made with oil, Kashmiri red chilli powder and whole dried red chillies. Finished with fresh coriander leaves, the Dubki Kadhi is best enjoyed with a hot serving of basmati rice.
