Aruna Vijay provided a twist on the classic Rava Dosa recipe, making it suitable for the Chaumasa period. She shared some tips for making the perfect Rava Dosa, such as ensuring the batter has a good consistency, mixing the batter before pouring, using any nut of choice for the pesto, and adding more rice flour if a crispier dosa is desired.

The recipe for Rava Dosa includes sooji, rice flour, maida/wheat flour, chilli flakes, pasta seasoning, salt, and water. The method involves making a thin batter and cooking the dosa on a hot tava until golden. Aruna Vijay advises allowing the batter to rest for at least 30 minutes for best results.

Pesto, Here we Go

For the pesto, she suggests using pista, almonds, cashews, pepper, salt, bread crumbs, basil, and olive oil. The ingredients are ground to a fine powder and mixed with pesto and olive oil to create a coarse paste. The pesto can be stored in the refrigerator.
