Ingredient:

  • 1 large aubergine (brinjal)
  • 1 tsp salt
  • 1 tsp pepper powder
  • 1 tsp oregano
  • 1 cup cornflake
  • ¼ cup flour
  • ¼ cup milk

For Spaghetti:

  • 200gm Spaghetti
  • 100gm cherry tomatoes
  • 1 cup tomato puree
  •  salt to taste
  • 1 tbsp chopped garlic
  • 1 tbsp pepper powder
  • 1 tsp oregano
  • parmesan cheese
  • basil leave
  • 2 tbsp olive oil

Method:

  • Cut the aubergine into thick slices and rub with salt, pepper, and oregano.
  • Coat in flour, dip in milk and coat with crushed cornflakes.
  • Heat 2 tbsp olive oil and fry till the cornflakes turn golden.
  • Bake in a preheated over at 180C for 10-12 minutes.
  • Heat 2 tbsp oil in a pan, add the chopped garlic followed by the tomato puree, salt, pepper, oregano, cherry tomato, and chopped basil leaves and cook for 2 minutes.
  • Add the cooked spaghetti with ¼ cup pasta water and mix well and cook for 2 minutes.
  • Serve topped with aubergine cutlets, parmesan cheese and basil leaves.
