Food influencer Saransh Goila shares a delicious, gluten-free spin on the iconic Mumbai sandwich, replacing bread with a crispy, flavour-packed cabbage base. This “Bombay Cabbage Sandwich” leans heavily into the recipe itself, simple ingredients, bold flavours, and a cooking process that transforms everyday vegetables into something truly indulgent.
Building the Cabbage Base:
The recipe begins with shredding half a cabbage and washing it thoroughly. To this, add ½ cup julienned carrots, one sliced onion, ¼ cup chopped spring onion greens, finely chopped ginger, and a green chilli. The mixture is then bound together with 3 tablespoons of besan, which plays a crucial role in giving structure to the cabbage “toast.”
Season with salt, crushed black pepper, and a tablespoon of sugar to balance the flavours. A small splash of water helps bring everything together into a thick, scoopable mixture. This step is key; the consistency should be firm enough to hold shape when cooked.
Cooking It to Perfection:
Generously melt butter in a pan, allowing it to coat the surface well. Add a portion of the cabbage mixture and lightly shape it into a flat round, similar to a pancake. Cover and cook on a low flame for about 5 minutes to ensure it cooks evenly from within.
Once set, flip carefully and cook the other side until golden and crisp. The result is a beautifully caramelised cabbage base that mimics toasted bread, but with a richer flavour and satisfying crunch. Repeat to make a second “toast” layer.
Layering the Sandwich:
Now comes the assembling. On one cabbage base, layer classic Mumbai sandwich ingredients, cheese slices, green chutney, cucumber, beetroot, boiled potato, onion, and tomato. Sprinkle sandwich masala generously for that authentic street-style taste, and add a drizzle of sriracha for a spicy kick.
Top with the second cabbage toast, press gently, and let it sit for a minute so the layers meld together.
Serve Hot & Enjoy:
Cut the sandwich into halves and serve immediately while it's warm and crisp. This recipe not only recreates Mumbai's signature flavours but does so with a healthier, gluten-free approach, making it both comforting and innovative in every bite.
