Ingredients You'll Need:
2 bunches of Bathua (cleaned and plucked)
250g of whisked curd
2 green chilies
8 garlic cloves
1 tbsp each of peppercorns and toasted cumin seeds (jeera)
Salt to taste
How to Make It:
Boil Bathua: Cook Bathua leaves with green chilies and garlic for 3–4 minutes—strain and cool.
Blend: Blend the boiled Bathua into a coarse paste.
Mix Raita: Combine 4 tbsp of Bathua paste with whisked curd. Add crushed pepper, toasted cumin seeds, and salt. Adjust consistency with water.
Optional Smoking: Infuse the raita with smoky flavors using coal and ghee for an extra layer of richness.
Serve chilled for a creamy and flavorful side dish that pairs beautifully with parathas or as part of a wholesome meal.
