How to Prepare the Marinade for Paneer 65

To start, prepare a thick paste using the marination ingredients. In a bowl, mix 1 cup rice flour, 1/2 cup corn flour, 1 tbsp ginger garlic paste, 2 tbsp chopped coriander (dhania), 1 tbsp chopped curry leaves (kadhi patta), 1 tbsp Kashmiri red chilli powder (lal mirch), 1 tsp black pepper, 1/2 tsp cumin (jeera) powder, 1/2 tsp coriander powder, 2–3 tbsp curd, salt to taste, and 1/4 cup water. This will be your spicy and flavorful base.

Marinate and Fry the Paneer

Take your paneer cubes and lightly sprinkle with 2 tablespoons cornflour. Mix slowly so that each item is uniformly coated. Add the thick marination paste and stir thoroughly, making sure all of the paneer is covered. Allow it to rest for a few minutes to absorb the flavours. Then, heat oil in a large skillet and cook the paneer cubes till brown and crispy.

Final Tadka for Extra Flavor

To prepare the final tadka, heat 2 tablespoons oil in a pan. Mix in 1 tbsp minced garlic, 1 tbsp chopped coriander, 8-9 curry leaves, 2 sliced green chillies, and 1 tbsp Kashmiri red chilli powder. Sauté just a few seconds. Then add the fried paneer and mix thoroughly for approximately a minute.
