  • ½ cup Samak rice, ground into a fine powder

  • 2 green chilies, finely chopped
  • Lemon juice, to taste
  • 1-2 tbsp curd (yogurt)
  • 1/3 cup finely chopped coriander leaves
  • ¼ cup roasted, crushed peanuts (optional)
  • 1 tbsp fresh roasted cumin powder
  • Sendha namak (rock salt), to taste
  • 1 tbsp grated ginger
  • For Tempering:
  • 2 tbsp desi ghee
  • 1 tbsp cumin seeds
  • 2 tbsp sesame seeds
  • Fresh grated coconut
  • 2 dried red chilies

Step-by-Step Recipe:

Prepare the Base:

Grate the doodhi and squeeze out all the liquid. Set aside.
Dry grind the samak rice until fine.

Mix Ingredients:

  • In a mixing bowl, combine the samak powder, rajgira flour, grated doodhi, green chillies, coriander, grated ginger, jeera powder, salt, and peanuts. Add in the oil and curd to bind the mixture into a soft dough.

Shape and Steam:

  • Form the mixture into cutlet shapes. Place these in a steamer and steam over boiling water for 10-15 minutes until thoroughly cooked.

Tempering and Serving:

  • Let the cutlets cool slightly. Heat ghee in a pan, and splutter the cumin and sesame seeds along with red chillies.
  • Add the steamed cutlets, allowing them to crisp up slightly for added texture.
  • Drizzle lemon juice over the cutlets while they are in the pan and toss to coat.
  • Garnish with grated coconut and additional coriander leaves.
  • Serve hot with green coriander chutney.
