Looking for a highly refreshing and gut-friendly summer drink? Aishwarya Sonvane shares her remarkable take on the traditional Solkadhi, richly infused with the cooling power of kokam and the goodness of beetroot. 

This perfect coastal Maharashtrian drink is not only tasty but also great for digestion too.

Ingredients:

  • 1 fresh chopped coconut
  • 10–12 of kokam petals (soaked well in hot water)
  • 2 garlic cloves, 1 green chilli & 1 tsp jeera
  • A few cubes of beetroot for good color
  • A small piece of ginger, 1 tsp of chaat masala
  • Salt to taste, fresh coriander & ice cubes

Method:

  • Soak kokam in hot water for about 15–20 minutes
  • In a blender, combine well the coconut, spices, beetroot & kokam water
  • Blend and strain well using a muslin cloth
  • Repeat the process with the leftover paste & cold water
  • Adjust the seasoning, add coriander, ice, and serve it chilled!
  • This vibrant and delectable Solkadhi with beetroot adds a very colorful and healthy twist to the classic drink and is much perfect for cooling down post-meal.
