Ingredients

  • 1 carrot, grated and chopped
  • 1 cup broccoli florets
  • 1/4 cup green peas
  • 1/2 inch ginger, peeled
  • 1/4 cup roasted peanuts
  • 1/2 cup coriander leaves
  • 1-1/2 cups sabudana
  • 1/2 cup yogurt
  • 1/4 cup rice flour
  • Salt, to taste
  • Pepper, to taste
  • Chaat masala, to taste
  • Oil to pan fry

How to Prepare Veggie-Loaded Sabudana Punugulu

Begin with soaking and washing sabudana in yogurt for 4-5 hours. Meanwhile, chop your vegetables—carrot, broccoli, and green peas. Then put these veggies, ginger, roasted peanuts, and coriander leaves in a chopper and grind coarsely.

After the sabudana has been soaked, mix it with the coarsely ground vegetable mixture. Mix rice flour, salt, pepper, and chaat masala and mix it well. Take small portions of the mixture and roll them into balls. Heat oil in a pan. Fry the balls until golden and crispy.

Your Veggie Loaded Sabudana Punugulu is ready to serve! The crispy bites go extremely well with either fresh green coconut chutney or tomato-onion chutney.
