There are summer afternoons when even stepping out of an air-conditioned room feels like a challenge. On days like these, a chilled dessert can be more than just a treat. It can be the perfect escape from the relentless heat. If you're looking for a refreshing way to make the most of mango season, food influencer Oindrila Bala has just the recipe.

Sharing her take on homemade mango kulfi, Oindrila described it as the ultimate answer to scorching summer days. Creamy, rich and packed with the sweetness of ripe mangoes, this frozen dessert combines classic Indian flavours with the comfort of a homemade indulgence.

Magic: Why This Mango Kulfi Stands Out

The beauty of this recipe lies in its simplicity. Unlike complicated desserts that require multiple steps and special equipment, this mango kulfi relies on a handful of ingredients that work together beautifully.

Full cream milk forms the base, while fresh cream adds richness and a velvety texture. Cardamom powder lends its signature aroma, and saffron introduces a delicate floral note. The real star, however, is the mango puree, which gives the kulfi its vibrant flavour and natural sweetness.

The result is a frozen dessert that tastes nostalgic yet luxurious.

Ingredients: Everything You Need

To prepare the mango kulfi, you'll need:

  • 1 litre of full-cream milk
  • 200 g fresh cream
  • 1 tsp cardamom powder
  • 2 pinches saffron
  • ⅓ cup sugar
  • 2 ripe mangoes (around 1 cup puree)
  • Chopped pistachios for garnish
  • Dried rose petals for garnish

Method: Turning Mangoes Into A Frozen Delight

The recipe begins by boiling full-cream milk and adding fresh cream, cardamom powder, and saffron. The mixture is then simmered until it reduces to around 70 to 75 per cent of its original volume, creating a rich and concentrated base.

Once sugar is added and dissolved, the mixture is allowed to cool completely. Meanwhile, ripe mangoes are blended into a smooth puree. After the milk mixture cools, the mango puree is stirred in thoroughly before the mixture is poured into kulfi moulds.

An overnight freeze allows the kulfi to set perfectly.

Finish: The Perfect Summer Treat

Before serving, garnish the kulfi with chopped pistachios and dried rose petals for added texture and elegance. The result is a creamy, fruity dessert that celebrates mango season most deliciously.

Whether you're hosting guests or simply looking for relief from a hot afternoon, Oindrila Bala's mango kulfi recipe is one you'll want to bookmark this summer.
