Method: Turning Mangoes Into A Frozen Delight
The recipe begins by boiling full-cream milk and adding fresh cream, cardamom powder, and saffron. The mixture is then simmered until it reduces to around 70 to 75 per cent of its original volume, creating a rich and concentrated base.
Once sugar is added and dissolved, the mixture is allowed to cool completely. Meanwhile, ripe mangoes are blended into a smooth puree. After the milk mixture cools, the mango puree is stirred in thoroughly before the mixture is poured into kulfi moulds.
An overnight freeze allows the kulfi to set perfectly.

Before serving, garnish the kulfi with chopped pistachios and dried rose petals for added texture and elegance. The result is a creamy, fruity dessert that celebrates mango season most deliciously.
