Ingredients:

For the Sev Burfi:

  • 1/2cup unsalted sev
  • 1/2 cup mawa
  • 1/3 cup sugar
  • 1/4 cup milk
  • pista, rose petals and silver warq for garnish

For the sugar syrup:

  • 1/2 cup sugar
  • 1/4 cup water

For the cigar rolls:

  • 5 spring roll sheets
  • Ghee for brushing
  • Maida slurry

Recipe

Make the Sev Barfi:

  • Begin by boiling the milk and sugar in a pan.
  • When it's heated, add the mawa and mash it thoroughly.
  • Add a pinch of cardamom (ilaichi) and saffron (kesar) for taste.
  • Allow the mixture to boil.
  • Then add the unsalted sev and combine everything.
  • Finish with a bit more mawa and some ghee. Cover the pan and let it sit for 5-10 minutes. Your Sev Barfi is now ready.
  • Prior to serving, garnish with nuts and rose petals.

Prepare the Cigar Rolls:

  • Take the Sev Barfi mixture and stuff it into the spring roll sheets.
  • Roll them up tightly and brush with ghee.
  • Use the maida slurry to seal the edges.
  • Air fry the rolls until they are crispy and golden.

Serve:

  • Drizzle some sugar syrup over the crispy cigar rolls and garnish with nuts.
