Crush Ingredients: Start by crushing the coriander seeds, green chilies, fresh coriander, and ginger into a coarse paste. This paste forms the base of the flavor for the dish.
Spice Mix:
- 1 tbsp Mustard oil
- 2 Dried red chilies
- 1/2 tsp Jeera (cumin seeds)
- 1/4 tsp Hing (asafoetida)
- 1 1/2 tsp Jakhiya (wild mustard seeds)
In a pan, heat the mustard oil and add the dried red chilies, jeera, hing, and jakhiya. Sauté until the spices release their aroma.
Add Paste and Spices: Add the coarse paste to the pan and mix everything well.
- 1 tsp Red chili powder
- 1/2 tsp Haldi (turmeric) powder
- 1/2 tsp Garam masala powder
- Salt to taste
- 1/4 cup Water
Add the red chili powder, haldi, garam masala, salt, and water. Mix thoroughly and let the mixture cook until the water evaporates.
Cook Potatoes: Add the diced potatoes to the pan and cook until they are well-coated with the spice mixture and all the water has evaporated.
Garnishing and Serving: To finish, garnish the dish with chopped coriander. The result is a mouth-watering plate of Pahadi Aloo Ke Gutke that looks as good as it tastes.
