What happens when the tangy, creamy flavours of Dahi Bhalla meet the soft, fluffy texture of a donut? Food influencer and chef Saransh Goila brings the two favourites together in a fun fusion recipe, pairing lentil vadas, spiced curd and chutneys with freshly fried donuts. The result is a playful snack packed with sweet, spicy and tangy flavours.
Prepare The Mini Dahi Bhallas:
Start by soaking 175g moong dal and 75g urad dal. Blend them with one chopped green chilli, half an inch of ginger and salt until you get a thick mixture.
Transfer the batter to a piping bag and carefully pipe small portions into hot oil. Fry until cooked, then immediately soak the mini vadas in hot water. Strain and keep them aside. For the spice mix, combine bhuna jeera powder, cloves, aamchur powder, chaat masala, salt and red chilli powder.
Make The Creamy Dahi Mixture:
Take half a cup of thick hung curd and add the prepared masala. Mix in imli chutney and green chutney according to your taste. Add the soaked mini vadas to this creamy mixture and gently combine everything. The vadas should be well coated with the spiced curd.
Prepare The Donuts:
Mix 30ml water, 20ml milk and one teaspoon instant yeast. Separately, take 300g maida, 3/4 teaspoon baking powder and 40g castor sugar. Add the yeast mixture and knead, gradually pouring in 150ml lukewarm water. Add 30g condensed milk and 45g butter, then knead until the dough reaches the windowpane stage.
Cover and allow it to double in size. Knock back the dough, shape the donuts and let them rise again. Fry them in medium-hot oil until cooked.
Assemble The Dahi Bhalla Donuts:
Dust the fried donuts with chilli, sugar and salt. Make a hole in each donut and fill it with green chutney, the prepared dahi-vada mixture and meethi chutney.
Finish with crunchy sev and fresh pomegranate seeds. Saransh Goila's Dahi Bhalla Donut is then ready to serve, combining the familiar flavours of Indian chaat with the indulgence of a freshly fried donut.
