Meet Ice Cream Sandesh, a beloved Kolkata specialty that continues to win hearts with its melt-in-the-mouth texture and irresistible flavor.

Food influencer Neha Deepak Shah recently shared her version of the iconic sweet, recalling how she first tasted it at Kolkata's legendary Girish Ch. Dey & Nakur Ch. Nandy. The experience left such a lasting impression that she still considers it one of the finest mithais she has ever had.

Kolkata's Chilled Delight:

Despite its name, Ice Cream Sandesh does not actually contain ice cream. The sweet gets its name from its creamy, smooth texture and chilled serving style, which resemble an ice cream dessert. Made primarily with fresh chenna, cream, and aromatic flavorings, it offers a luxurious bite that instantly melts in the mouth.

Neha's homemade version recreates the traditional treat using one litre of milk, fresh cream, milk, corn flour, cardamom powder, rose water, and a zero-calorie sweetener. Garnished with pistachios and rose petals, the result is elegant enough for festive celebrations and comforting enough for an everyday indulgence.

What Makes It Special:

Unlike regular sandesh, which is often shaped and served fresh, Ice Cream Sandesh is steamed and then chilled before serving. This process gives it a soft, custard-like consistency that sets it apart from other Bengali sweets.

The recipe is also highly versatile. While cardamom and rose water form the classic flavour profile, saffron and cardamom combinations work equally well. Adding colour is entirely optional, allowing home cooks to customize the dessert according to their preference.

Simple Ingredients, Rich Results:

The preparation begins by blending fresh chenna with cream, sweetener, corn flour, cardamom powder, and rose water until the mixture becomes silky smooth. The batter is then poured into a mould lined with parchment paper and steamed in a preheated cooker for around 30 to 35 minutes.

Once cooked, it is cooled to room temperature and refrigerated until thoroughly chilled. According to Neha, this final step is crucial because Ice Cream Sandesh tastes best when served cold.

For the perfect texture, blend the mixture until completely smooth. Always line the mould with parchment paper to ensure easy release. Most importantly, allow the dessert to chill well before serving, as that's when its signature creamy flavour truly shines.
